Denne kaffen er en natural. Dvs. at den har gått gjennom en prosess hvor den er tørket med fruktkjøttet på. Det gir kaffen en naturlig sødme.

El Martillo is one of Jose Antonio Salaverria´s medium sized farms. It is situated at about 1700 masl and the size of the farm is 19,5 hectares . 1700 masl is considered a really high altitude for growing coffee in El Salvador. 

The cultivars in this lot is a mix of Bourbon and Hibrido de San Francisco (a local hybrid of the dwarf bourbon Pacas and old Bourbon Elite). 

The producer is innovative in ways of processing and farming. They separate everything by days of picking and do different processes, fermentation and drying techniques depending on capacity and potential of the lot. 

This lot is part of a project to develop different types of naturals. In this case it is produced as a natural dried carefully on raised beds. The drying will affect the amount of fruit flavor and fermentation. They manage the flavor development and drying times by building up layers and resting the coffees in piles.
